Ingredients

For the Cowboy Butter Chicken
  • 1/2 cup unsalted butter softened, for cowboy butter mix.
  • 2 cloves garlic minced, for aromatic kick.
  • 1 tablespoon fresh lemon juice brightens up the dish.
  • 1 lemon zest adds a fragrant citrus note.
  • 1 teaspoon smoked paprika for a subtle smokiness.
  • 1 teaspoon dried parsley adds a touch of herbal freshness.
  • 1/2 teaspoon salt enhances all flavors.
  • 1/4 teaspoon black pepper for a little heat.
  • 1/4 teaspoon red pepper flakes optional for spice.
For the Pasta
  • 8 oz bowtie pasta this shape holds sauce beautifully.
  • 2 cups broccoli florets adds color and nutrition.
For Serving
  • Grated Parmesan cheese
  • Fresh parsley

Equipment

  • Large Pot
  • Large Skillet
  • Mixing Bowl

Method

  1. Step 1: In a large pot of salted boiling water, cook the bowtie pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Step 2: In the same pot, add the broccoli florets and cook for about 2-3 minutes until tender but still bright green. Remove the broccoli and set aside.
  3. Step 3: Season the chicken breasts with smoked paprika, salt, pepper, and red pepper flakes (if using). In a large skillet over medium-high heat, melt 2 tablespoons of the butter. Add the chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing.
  4. Step 4: In a bowl, combine the remaining softened butter, minced garlic, lemon juice, lemon zest, dried parsley, and a pinch of salt and pepper. Mix until well combined.
  5. Step 5: In the skillet used for the chicken, add the cooked pasta, broccoli, and cowboy butter mixture. Toss everything together over medium heat, adding reserved pasta water as needed to create a creamy sauce.
  6. Step 6: Plate the pasta with the chicken on top. Garnish with grated Parmesan cheese and fresh parsley. Enjoy!

Notes

This dish can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of water or broth to help loosen the sauce and keep it creamy.
