Ingredients
  

For the Casserole
  • 4 cups cooked, shredded chicken Use leftover roast chicken or store-bought rotisserie chicken for convenience.
  • 1 can cream of chicken soup 10.5 oz can
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup chicken broth
  • 2 cups frozen mixed vegetables Peas, carrots, and corn
  • 1 cup shredded cheddar cheese
  • 1 cup crushed buttery crackers
  • 1/2 cup melted butter
  • Salt and pepper to taste
  • Optional: Chopped fresh parsley for garnish

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, mayonnaise, chicken broth, mixed vegetables, and half of the shredded cheddar cheese. Season with salt and pepper to taste. Mix well until all ingredients are combined.
  3. Step 3: Pour the chicken mixture into a greased 9x13 inch baking dish and spread it evenly.
  4. Step 4: In a separate bowl, mix the crushed crackers with melted butter until well combined. Sprinkle the cracker mixture over the chicken casserole.
  5. Step 5: Top with the remaining shredded cheddar cheese.
  6. Step 6: Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Step 7: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley if desired before serving.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. You can also freeze the casserole for up to 3 months. Just make sure to let it cool completely before freezing, and reheat it in the oven for the best texture.
