Ingredients
  

For the Casserole
  • 1 lb ground beef a versatile protein that adds richness
  • 4 medium potatoes peeled and sliced
  • 1 medium onion chopped
  • 1 can diced tomatoes (15 ounces)
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil for sautéing

  • fresh parsley

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Step 3: Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  4. Step 4: Stir in the diced tomatoes, beef broth, salt, black pepper, and paprika. Bring to a simmer.
  5. Step 5: In a greased 9x13 inch baking dish, layer half of the sliced potatoes. Pour half of the beef mixture over the potatoes. Repeat with the remaining potatoes and beef mixture.
  6. Step 6: Cover the baking dish with aluminum foil and bake for 45 minutes.
  7. Step 7: Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  8. Step 8: Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

If you have leftovers, you can store them in an airtight container in the fridge for up to 3 days. You can also freeze it for up to 3 months.
