Ingredients
  

For the Peach Filling
  • 6 cups fresh peaches peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tbsp cornstarch
For the Topping
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 1/2 tsp salt
  • 1/2 cup unsalted butter melted

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, ground cinnamon, and cornstarch. Toss until the peaches are well coated and pour the mixture into a greased 9x13 inch baking dish.
  3. Step 3: In another bowl, mix together the rolled oats, all-purpose flour, brown sugar, chopped pecans, and salt. Pour the melted butter over the oat mixture and stir until everything is evenly combined.
  4. Step 4: Evenly spread the topping over the peach filling in the baking dish.
  5. Step 5: Bake in the preheated oven for about 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
  6. Step 6: Allow to cool slightly before serving. Enjoy warm, optionally with a scoop of vanilla ice cream or whipped cream on top.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, simply pop it in the oven at 350°F (175°C) for about 10-15 minutes until warmed through.
